| Apple Pasta Salad 1 container of plain nonfat yogurt, (8 ounce) 2 cups of uncooked rotini pasta 1 can of unsweetened crushed pineapple, (8 ounce) 1/2 cup of shredded carrot 1 cup of sliced celery 1/2 teaspoon of salt, optional 1/4 cup of sliced green onions 1/4 teaspoon of garlic powder 1/4 cup of raisins 1/4 teaspoon of dry mustard 3 cups of diced unpeeled York or Winesap apples 1 teaspoon of finely chopped crystallized ginger 1 tablespoon of honey

Thoroughly combine the yogurt, pineapple, salt, spices, ginger, honey and refrigerate. Cook the pasta according to package directions, omitting the salt. Rinse with cold water and drain thoroughly. Cool completely. In a large bowl, combine all ingredients including yogurt dressing. Chill thoroughly before serving. |
