Preheat your oven to 375ºF. In a large mixing bowl, cream shortening and sugar together. Add egg. Gradually add flour, baking soda, almond extract, and honey to shortening mixture, blend until smooth. Take a small piece of dough and roll it into a 1 inch ball. Repeat until all dough is used. Flatten each ball to 1/2 inch thickness. Place almond in center of each. Bake on greased cookie sheet for 15 to 20 minutes, until lightly browned. Makes 4 dozen
