Baked Catfish

1/4 cup of yellow cornmeal
1/4 cup of all purpose flour
1/4 cup of grated Parmesan cheese
1 teaspoon of paprika
1/2 teaspoon of salt
1/2 teaspoon of ground black pepper
1/8 teaspoon of ground red pepper
1 egg white
2 tablespoons of skim milk
Four 4 ounce catfish fillets
Butter flavored cooking spray
1/2 teaspoon of sesame seeds
Lemon wedges

Combine the first 7 ingredients and set aside. Whisk together egg white and milk. Dip the fillets in the milk mixture, and dredge in cornmeal mixture. Place the fillets on a foil lined baking sheet coated with cooking spray. Sprinkle with sesame seeds, and coat each fillet with cooking spray. Bake at 350º F. for 30 minutes or until the fish flakes easily when tested with a fork. Serve with lemon wedges. Makes 4 servings
