In a large skillet, brown the chops on both sides in olive oil. Remove the chops from the skillet, arrange in a 2 quart casserole. Add potato and onion to pan drippings, heat thoroughly, stirring carefully. Sprinkle with salt and nutmeg, stir in apple wedges. Spoon the mixture over chops. Add 1 cup of apple juice to skillet, heat until simmering, pour over the apple potato mixture. Cover the casserole, bake at 350ºF. for 45 minutes or until the chops and vegetables are tender. Using a slotted spoon, place the apple potato mixture on serving platter, arrange the chops on top. Combine the remaining apple juice and cornstarch, stirring until free of lumps, pour into pan juices, cook until thickened, stirring constantly. Serve the sauce over chops or separately, if desired.
