Slice the beef thinly across the grain into bite size strips. In a small bowl, combine cornstarch, sugar, and salt. Stir in sherry and soy sauce, set aside. Preheat a wok or large skillet over high heat, add oil for 3 to 4 minutes or until the meat is brown and the pepper is tender crisp. Stir in cornstarch mixture, blend into meat mixture. Cook and stir until thick and bubbly. Stir in tomatoes. Cook and stir until heated through. Serve with rice. Makes 4 servings |
