Preheat your oven to 375ºF. Wash and dry the mushrooms. Remove stems, chop and reserve for stuffing. Sauté the diced bacon, onion , green pepper, chopped mushrooms stems and seasonings; remove from heat when cooked through but not browned. Combine the cheese with bacon mixture, press firmly into mushroom caps, mounding slightly. Put buttered crumbs into small bowl. Lightly press filling side of mushrooms into crumbs to coat. Place the mushrooms in baking dish, filling side up. Add 1/4 cup of hot water to baking dish and bake uncovered for 15 to 20 minutes. Garnish with parsley. |
