Baked Salmon 2

one 1 pound salmon
2 tablespoons of lemon juice
1/4 teaspoon of salt RecipesFromScratch.com9/18/06
a dash of paprika
1 teaspoon of Angostura Aromatic Bitters
1 cup of sour cream
3 slices of onion, separated into rings

Drain half of the juice from the salmon and place it in a 1 quart casserole. Split the salmon neatly to remove center bone and any pieces of skin. Replace in original shape. Pour lemon  juice over the top and sprinkle with salt and paprika. Mix  Angostura with sour cream and pour over salmon. Lay onion rings on top. Bake at 325ºF. oven for 40 minutes or until the salmon is hot and cream is reduced to a rich sauce. Serves 3 - 4
