Creamy Coleslaw

1 large head of cabbage (about 4 lbs.), shredded
1/4 cup of sugar
1/4 cup of lemon juice
1/4 cup of mayonnaise
1/2 teaspoon of salt
1/4 teaspoon of pepper
1 cup of grated carrots
1/2 cup of diced green pepper

Place the shredded cabbage in a very large bowl; sprinkle with sugar, toss just until mixed; cover. Chill for 30 minutes. Mix lemon juice and mayonnaise in a small bowl. Pour over cabbage and sprinkle with salt and pepper. Add carrots and green pepper; toss to mix well. Makes 8 cups.
