Delicious Meat Loaf
1 1/2 pounds of ground beef
1/2 pound of ground pork
1/2 pound of ground veal
1 cup of cooked rice
1 can of pimentos, finely chopped
1 large onion, finely chopped
1 egg
12 olives, finely chopped
salt and pepper to taste
2 strips of bacon
1 quart of canned tomatoes |

Mix all ingredients except the bacon and tomatoes, shape into 2 loaves.
Place 1 bacon strip over each loaf. Season tomatoes to taste, pour over
loaves. Bake at 400ºF. for 1 hour and 30 minutes. Thicken broth for gravy.
