Eggplant Supreme

1 medium eggplant
1 1/2 cup of milk
4 eggs, lightly beaten
1 teaspoon of salt
1/2 teaspoon of pepper
1 1/2 cups of cracker crumbs
1 1/2 cups of grated cheese
1 stick of butter, melted  

Peel and slice the eggplant, then place in a saucepan with 1 cup of water. Cook until tender, then drain. Add the remaining ingredients except 1/2 cup of crumbs, 1/2 cup of cheese and a small amount of the melted butter. Mix well and pour into a baking dish, then sprinkle with the reserved crumbs, cheese and butter. Bake in 350ºF. oven for about 25- 30 minutes or until set. Makes 4 - 6 servings
