Haunted Marshmallows

2 packages + 1 teaspoon of unflavored gelatin
2/3 cup of cold water, divided
1 1/4 cups of sugar
1 cup of light corn syrup
2 teaspoons of vanilla
Powdered sugar
1 1/2 cups Black and orange colored sugar


Sprinkle the gelatin over 1/3 cup cold water. Let stand 10 minutes to soften. Bring the sugar and remaining 1/3 cup water to a boil in a small covered saucepan. Uncover and boil 5 minutes. Pour the mixture into the bowl of an electric mixer. Add corn syrup and gelatin and stir until dissolved. Beat at medium speed until stiff peaks form, about 10-20 minutes. Add in vanilla. Dot the corners of a jelly roll pan with a bit of the marshmallow mixture. Then line the pan with wax paper. (The dots keep the paper in place!) Spread the marshmallow mixture evenly into a 3/4" thick rectangle. Sprinkle lightly with powdered sugar and let stand until firm. Cut out Halloween shaped using metal cookie cutters. Remove the cutouts form the pan using a metal spatula. Coat the marshmallows with colored sugar. Makes about 24 2" marshmallows. Converted by MC_Buster. Converted by MM_Buster v2.0l.
