| Lobster Soufflé
1 cup of thick white sauce 1-2 cup of minced cooked lobster Salt & pepper 3 egg yolks, well beaten 3 egg whites, stiffly beaten |
| Combine all of the ingredients, fold in egg whites. Pour into a greased baking dish, set in pan of hot water and bake in moderate oven (350ºF.) 45-50 minutes or until firm to touch. Serve at once.
