| In large bowl, combine bran and milk; let stand 20 minutes. Stir in syrup, applesauce and egg. Preheat oven to 400ºF. Spray eight 2 3/4" muffin cups with nonstick cooking spray. In medium bowl, sift together flour, baking powder, baking soda, salt and allspice. Add bran mixture, stirring until just combined; stir in raisins. Spoon batter evenly into prepared cups, filling each about two-thirds full. Bake 18-20 minutes, until toothpick inserted in center comes out clean. Cool on wire rack 5 minutes. Remove muffins from pan; cool completely on rack. Makes 8 servings |
