Add the Tabasco to egg and tomato juice; beat until blended. Stir in bread crumbs. Add remaining ingredients, mix with fork until blended. Form into loaf; place in shallow baking pan or pack into a 9 x 5 x 3 inch loaf pan. Bake at 350ºF. for 1 hour and 15 minutes. Makes 8 -10 servings Creole Sauce 1 garlic clove, minced 1/3 cup of chopped onion 1/3 cup of chopped green pepper 1/3 cup of diced celery 3 tablespoons of butter or margarine one 20 ounce can of tomatoes 1/2 teaspoon of sugar 3/4 teaspoon of salt 1/2 teaspoon of Tabasco Sauté the garlic, onion, green pepper and celery in butter until the onion is tender but not brown. Add the remaining ingredients'; simmer for 30 minutes. Serve over meat loaf. |
