| | Noodle Coleslaw 2 packages (3 ounce each) of any flavor ramen noodle soup mix Dressing 1/3 cup of bottled Thai peanut sauce 2 tablespoons of light soy sauce 2 tablespoons of cider vinegar 2 tablespoons of water 1 bag (16 ounces) coleslaw 1 medium English cucumber, halved lengthwise, then sliced thin 1/2 cup of sliced scallions |
| Bring 4 cups of water to a boil in a 3 quart saucepan. Break the noodles in thirds and boil for 3 minutes or until tender. Drain in a colander, cool under cold running water. Meanwhile mix the dressing ingredients in a large bowl, add noodles, coleslaw, cucumber and scallions. Just before serving, toss to mix and coat. Serves 4 |
