| In a medium bowl, toss together the bran, flour, soda and sugar. Stir in the bananas and vanilla. Add yogurt. Ina separate mixing bowl, beat the egg whites until soft peaks form. Fold in the batter. Cook on hot griddle until bubbles appear on the surface. Flip over and cook until done. Serve hot with warm syrup and fresh fruit. Sprinkle with chopped pecans, if desired. |
