Oysters Bordelaise

3 dozen oysters on half shells
rock salt
1 teaspoon of salt
1/2 teaspoon of paprika
2 tablespoons of minced shallots or scallions
1/2 cup of dry red wine

 

Place the oysters on a layer of rock salt in a baking pan. Mix the salt, paprika, shallots and wine and spoon over the oysters. Sprinkle with bread crumbs. Bake at 425ºF. for 3 - 5 minutes or until the oysters are heated through. Makes 6 servings
