Oven Swiss Steak serves 2 

1/2 to 3/4 pound of boneless beef round steak, 3/4 inch thick
2 tablespoons of all purpose flour
1/2 teaspoon of salt

one 8 ounce can of stewed tomatoes, 1 cup
1/4 cup of chopped celery
1/4 cup of chopped carrot
1 tablespoon of chopped onion
1/4 teaspoon of Worcestershire sauce
2 tablespoons of shredded sharp process American cheese

 

Cut the meat into 2 portions. Mix the flour and salt; pound into meat. Set aside remaining flour. Brown the meat in a small, shallow baking dish. Blend the remaining flour with drippings in skillet. Add remaining ingredients, except cheese; cook stirring constantly, till the mixture boils. Pour over meat. Cover and bake at 350ºF. until the meat and vegetables are tender, about 2 hours. Sprinkle cheese over meat. Return to oven for a few minutes to melt cheese. Makes 2 servings

* Meal idea - This goes great with baked potatoes & a salad of lettuce, oranges and avocado slices!
