Pumpkin Bread

1 cup of brown sugar
1/2 cup of sugar
1 cup of cooked or canned pumpkin
1/2 cup of vegetable oil
2 eggs, beaten
2 cups of sifted flour
1 teaspoon of baking soda
1/2 teaspoon of salt
1/2 teaspoon of nutmeg
1/2 teaspoon of cinnamon
1/4 teaspoon of ginger
1 cup of raisins
1/2 cup of chopped nuts
1/4 cup of water

 

Combine the sugars, pumpkin, oil, and eggs. Beat until blended. Sift together the flour, soda, salt and spices. Add to pumpkin mixture and mix well. Stir in raisins, nuts and water. Spoon into a well oiled 9 x 5 x 3 inch loaf pan. Bake in a 350º:F. oven for 65 to 75 minutes or until a toothpick inserted into the bread comes out clean. Turn out onto a wire rack to cool thoroughly before slicing.

Pumpkin Bread 2

3 cups of sugar
1 cup of salad oil
4 large eggs, beaten
One 16 ounce can of pumpkin or 2 cups of mashed pumpkin
3 1/2 cups of flour
1 teaspoon of baking powder
2 teaspoons of salt
2 teaspoons of baking soda
1/2 teaspoon of ground cloves
1 teaspoon of cinnamon
1 teaspoon of allspice
2/3 cup of water
1 - 1 1/2 cups of chopped pecans, optional

Using an electric mixer, combine the sugar, oil and eggs. Beat until light and fluffy. Stir in the pumpkin. Combine the dry ingredients and stir into the pumpkin mixture. Add the water and the nuts, mixing well. Spoon the batter into 2 well greased 9 x 5 x 3 inch loaf pans. Bake in a 350ºF. oven for 65 to 75 minutes.
