Rhubarb Pie

Pastry for 9 inch 2 crust pie
3 cups of rhubarb, cut fine
1 1/2 cups of sugar
1 egg
1/4 cup of flour
1/2 teaspoon of cinnamon
1 tablespoon of butter

Place rhubarb in a large bowl. Add sugar, egg, flour and cinnamon. Mix well. Spoon into pastry lined pie pan. Dot with butter. Place top crust on pie, crimp edges. Brush with milk and sprinkle with sugar. Bake in a 350ºF. oven for 45 to 50 minutes or until rhubarb is done and crust is brown. Makes 1 pie
