Sourdough Loaves

2 tablespoons of sugar
2 teaspoons of salt
2 packages of yeast
About 7 cups of flour
1 (16 oz.) no-fat plain yogurt
 

In large bowl with spoon, mix sugar, salt, yeast and 6 cups flour. In 2 quart pan over medium heat, heat yogurt and 2/3 cup water until very warm (125-130º). Stir into dry ingredients, mixing until blended and dough forms a ball. Turn dough onto lightly floured board; knead until smooth and elastic, about 10 minutes, working in about 1 cup flour. (This can be done with mixer and dough hooks.) Cut dough in half; cover and let rest 10 minutes. Grease large cookie sheet. Shape into 2 round loaves. Cover and let rise in warm place about 45 minutes until double. Preheat oven to 400ºF.  Cut 3 slashes in each loaf; brush with water. Bake 25-30 minutes until loaves sound hollow when lightly tapped. Makes 2 loaves.
