| Sourdough Pancakes
2 cups of warm water 2 packages of dry yeast 1/4 cup of sugar 1 cup of flour 2 cups of sourdough 1 cup of milk 1/4 cup of sugar 3 well beaten eggs 1 3/4 cup of flour 2 teaspoons of soda 1 teaspoon of salt |
| To make sourdough: The night before combine water and yeast, making sure yeast is dissolved. Add 1/4 cup sugar and 1 cup flour and stir until smooth. Cover with plastic wrap and put in a warm place until morning. In morning sourdough will be watery but you will know the yeast has "worked". Stir it and remaining ingredients together until almost lump free. Fry 'em up and serve with syrup. Sourdough Pancakes
1 cup of sourdough starter 2 cups of warm water 2 1/4 cups of all-purpose flour 2 eggs 2 tablespoons of sugar 2 tablespoons of corn oil or bacon drippings 1/3 cup of milk 1 teaspoon of baking soda
Mix together starter, warm water and flour, cover bowl, let stand overnight. With whisk, beat in remaining ingredients. Let batter stand 10 minutes. Using hotter griddle than usual, make silver dollar size pancakes, using 1 tablespoon batter for each. Flip pancakes when surface bubbles form. Makes 4 1/2 cups batter, about 70 small pancakes |
