| | Salmon Corn Scallop One 7 1/2 ounce can of Alaska salmon 1/2 cup of chopped onions 1/4 cup of chopped green peppers 3 tablespoons of margarine 1 1/4 cups of crushed water crackers 1 cup of milk One 16 ounce can of cream-style corn 2 eggs, slightly beaten 1 cup of shredded sharp Cheddar cheese 1/4 teaspoon of black pepper | | Drain and flake salmon. Set aside.
Sauté onions and green peppers in 2 tablespoons margarine for 5 - 10 minutes, or until tender. Stir in flaked salmon, 1 cup cracker crumbs, milk, corn, eggs, cheese and pepper. Turn into an 8 × 8 × 2-inch baking dish. Melt remaining margarine; toss with remaining cracker crumbs. Sprinkle over casserole. Bake at 350ºF for 30 minutes, or until knife inserted in center comes out clean. |
