| | Southern Ambrosia Parfait 1 cup of milk 1 cup of heavy cream 4 egg yolks 1/4 cup of sugar 1 tablespoon of flour 1 teaspoon of salt 3 tablespoons of sherry 8 medium oranges, sectioned 1 1/2 cup of grated coconut | | Pour the milk and cream into top of a double boiler and heat over boiling water until scalded. Beat the egg yolks in a mixing bowl until light and stir in sugar, flour and salt. Add the milk mixture slowly, stirring constantly. Return to the double boiler and cook until thick. Cool, then add the sherry. Place alternate layers of orange sections, custard and coconut in a serving dish, ending with coconut. Refrigerate until chilled. |
