Stuffed Flounder

one 2 pound flounder, cleaned
3 tablespoons of lemon juice
3 tablespoons of chopped parsley
1 onion, minced
1 clove garlic, minced
1/2 green pepper, minced
1/4 cup of butter
3 slices of toast, cubed
2 eggs
salt and black pepper to taste
1 1/2 cup of crab meat
1/4 cup of Parmesan cheese
paprika

 

Cut a slit to the bone down the dark side of flounder. Pour the lemon juice in the slit, then stuff with the parsley. Marinate in the refrigerator for 2 hours. Sauté the onion, garlic and green pepper in the butter until soft, then combine with the remaining ingredients except the cheese and paprika. Remove the parsley from the flounder and stuff with the crab meat mixture. Place in a baking pan. Bake in 375ºF. oven for about 45 minutes, then sprinkle with the cheese and paprika. Bake for about 15 minutes longer. Makes 4 servings
