Zucchini & Pasta Soup

1/4 cup of olive oil
1 onion, chopped
2 1/4 cups of diced zucchini
2 ripe tomatoes, skinned and chopped
6 cups of hot beef broth
3/4 cup of spaghetti, broken into small pieces
1/4 cup of chopped fresh basil leaves
1/4 cup of chopped parsley
salt and pepper to taste
2 tablespoons of grated Pecorino or Parmesan cheese

 

Heat oil in a large saucepan. Add the onion and sauté until translucent. add the zucchini and tomatoes, sauté stirring constantly, for 2 minutes longer. Add the beef broth and bring to a boil. Add the pasta to soup, stir once and cook for 6 minutes or until just tender. Stir herbs into soup and season with salt and pepper. Sprinkle with grated cheese before serving. Serves 4
