2 tablespoons of butter 1 cup of sugar 3 eggs (separated) 3 tablespoons of flour 1/2 teaspoon of salt Juice and rind of 1 lemon 1 1/2 cup of hot milk |

Cream butter, add sugar and egg yolks, beat until fluffy. Stir in flour, salt, lemon juice, grated rind and hot milk. Fold in stiffly beaten egg whites. Pour into 9 inch unbaked pie shell and bake 40 minutes at 400ºF. |
