Zesty Tofu (3 Pts)

1 tablespoon of reduced-sodium soy sauce
2 teaspoons of honey
1 teaspoon of white-wine vinegar
1 teaspoon of vegetable oil
1/2 teaspoon of minced, peeled gingerroot
1 Pinch of crushed red pepper flakes
1 cup of firm or extra-firm tofu, cut into 1-inch cubes
1 teaspoon of dried bonito flakes, toasted,  optional

In a large bowl, whisk soy sauce, honey, vinegar, oil, gingerroot and pepper flakes. Divide tofu between 2 bowls and coat with sauce. Let stand 5 minutes. Serve, sprinkled with bonito flakes.

NOTES : Bonito, sometimes called skipjack, is a member of the tuna family. The dried flakes add a salty flavor to the tofu. Look for them in Asian markets.
