| Orange Applesauce Muffins
2 cups of flour
1 1/2 teaspoons of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of ground cinnamon
1/4 teaspoon of salt
1 egg
1 cup of unsweetened applesauce
1 teaspoon of orange zest
1/2 cup of orange juice
3 tablespoons of cooking (vegetable) oil |

Preheat oven to 400ºF. Use paper liners or grease muffin pan with cooking spray bowl Combine the dry ingredients and spices bowl Beat egg, add applesauce, orange zest, orange juice, and oil add wet mixture to flour mixture, stir until just moistened pour into prepared muffin tin, bake for 20 minutes Makes 12 muffins
