| Orange Banana Bread
6 ounces of orange-juice concentrate 2 large, very ripe bananas 2 eggs 2 cups of self-rising flour 2 1/2 teaspoons of pumpkin-pie spice 1 teaspoon of baking soda 4 tablespoons of golden raisins |

Thaw orange juice, but don't dilute. Combine it with peeled bananas and eggs in an electric mixer bowl. Beat until fluffy. Stir flour, spice, and baking soda together and add to mixing bowl. Beat 1 minute. Stir in raisins. Spoon into a nonstick 5x9" loaf pan. Bake in a preheated 350ºF. oven 30 to 35 minutes, until a knife inserted in the center comes out clean. |
