Orange Currant Muffins

2 cups of whole wheat flour
1 1/2 teaspoons of baking powder
1 egg, beaten
3/4 cup of orange juice
1/4 cup of oil
1/3 cup of honey
2 drops of almond extract
1/4 cup of currants
1 teaspoon of grated orange rind

Combine dry ingredients in bowl. Add currants and orange rind to dry ingredients and stir to combine. Combine rest of ingredients and add to dry ingredients. Stir to combine. Pour batter into muffin tins sprayed with no-stick spray. Bake at 350ºF. for 20 minutes.
