Carrot Recipes

Carrots: Cook peeled carrots in a small amount of boiling water for about 10 minutes or until tender. After 5 minutes of cooking time add any of the following combinations:

1 Parsley, lemon juice and butter.
2 Bay leaf & Thyme or dill weed, add to water while carrots are cooking
3 Curry powder and freshly grated ginger
4 Brown sugar & Cinnamon
5 Honey & allspice, cinnamon or nutmeg


Baked Carrots: 2 pounds of baby carrots, 1/4 cup of butter  Directions: Scrub carrots with vegetable brush, leaving them whole. Cook in a little water until tender. Arrange carrots in pan with butter and brown at 475ºF. oven.
