Carrot Fritters 2  RecipesFromScratch.com8/31/06

Two 1 pound cans of sliced carrots, drained
1/2 cup of sugar
1 egg
1 teaspoon of vanilla
a dash of salt
2 cups of unsifted flour
1 teaspoon of grated lemon rind
1/2 teaspoon of baking powder
1/4 teaspoon of mace
1/4 teaspoon of nutmeg
oil for deep fat frying

Place the carrots, sugar, egg, vanilla and salt in blender. Whirl at high speed until smooth. Pour into large bowl. Fold in flour, lemon rind, baking powder, mace and nutmeg. Drop by tablespoons in oil heated to 380ºF. Fry for 5 - 6 minutes until deep brown, turning frequently. Drain well on paper towels. Makes 24
