Oatmeal Chocolate Candy Cookies

1 cup of granulated sugar
1 cup of brown sugar, firmly packed
1 cup of butter, softened
2 Eggs
1 tablespoon  of vanilla
2 cups of all-purpose flour
1 1/2 cups of quick-cooking oats
1 teaspoon of baking soda
1/2 teaspoon of salt
2 cups of candy-coated milk chocolate
1 cup of salted peanuts, coarsely chopped

Combine granulated and brown sugars, butter, eggs and vanilla in a large mixing bowl. Beat with an electric mixer at medium speed, scraping the sides of the bowl often, until light and fluffy, about 2 to 3 minutes. Add flour, oats, baking soda and salt. Beat at low speed, scraping sides of bowl often, until well-mixed, about 2 to 3 minutes. By hand, stir in candy and peanuts. Drop dough by scant 1/4-cupfuls 2 inches apart onto greased cookie sheets. Bake in a preheated 350ºF.  oven until light golden brown, about 14 to 18 minutes. Served at the Chicago 1996 Democratic National Convention.
