Christmas Lime Parfait Pie
two 3 ounce packages of lime jell-o 2 cups of boiling water 1 teaspoon of shredded lime peel 1/3 cup of lime juice 1 quart of vanilla ice cream one 10 inch pastry crust, baked |

Instructions:
Dissolve jell-o in boiling water. Stir in peel and lime juice. Add ice cream by spoonfuls, stirring until melted. Chill until mixture mounds slightly when spooned.
Pour into cooled baked crust. Chill until firm (overnight). Top with whipped cream or Cool Whip. Top with a cherry.
