Pineapple Boats with Coconut Sauce
1 fresh pineapple
1 cup of coconut sauce
ground cinnamon
Cut the pineapple lengthwise into quarters, carefully cutting through
the green leaves at the top to leave a section of leaves on each
pineapple quarter. Using a very sharp small paring knife, carefully cut
each corner of the pineapple quarter from its shell. It is necessary to
cut down both sides of the pineapple section. Cut the hard top core
section of the pineapple off and discard it. Cut the piece of pineapple
sitting on its shell in half lengthwise, then cut horizontally into bite
size pieces. Top each pineapple boat with Coconut sauce and sprinkle
lightly with cinnamon. Makes 4 pineapple boats |
