Dijon Vinaigrette Dressing

1 egg yolk
2 tablespoons of white wine vinegar
1 tablespoon of Dijon mustard
3/4 cup of extra virgin olive oil
Salt and freshly ground white pepper
Minced fresh herbs to taste
Fresh lemon juice, if needed

Combine the egg yolk, vinegar, mustard, oil, salt, and white pepper in a jar or blender. Mix well. Stir in the herbs, Taste and add salt and lemon juice if needed. Makes 1 cup
