| Breaded Eggplant
2 pounds of eggplant 1 teaspoon of salt 1/8 teaspoon of pepper 1 egg 1/2 cup of milk 1/4 cup of corn flake crumbs 1/4 cup of cracker crumbs 1/4 cup of seasoned bread crumbs 1/4 cup of Parmesan cheese 1/8 cup of grated American cheese |
| Peel the eggplant & cut into 1/2" - 3/4" slices. Mix the egg, milk, salt & pepper into shallow dish. Mix all dry ingredients in a second shallow dish. Dip eggplant first in egg & then dry mixture. Bake on greased cookie sheet at 400ºF. for 30-40 minutes. |
