Eggplant Parmigian
1 large or 2 medium eggplant, slice
and parboil about 6 minutes
Layer slices with following ingredients in a buttered
casserole:
1 large can of tomato sauce
1 green pepper
1 tomato, sliced
1 onion
1/2 kielbossi ring
8 ounces of mozzarella cheese, chopped
4 ounces of cheddar cheese, chopped

Bake covered for 1/2 hour at 400ºF. Then uncover
and bake for 1/2 hour at 350ºF. Serves 3 - 4
