Beat the eggs slightly in a large bowl. Mix the remaining ingredients, except oil into eggs. Divide into 8 portions. Grease a hot skillet with a little peanut oil. Sauté omelets on one side until golden brown. Turn and sauté other side. Makes 8 small omelets, 4 servings Lobster Egg Fooyoung, Shrimp Egg Fooyoung Substitute 1 1/2 cups of shredded cold boiled lobster or shrimp for chicken. Add 1/4 cup of finely cut green pepper or scallion tops to mixture. |
