-= Ingredients =- 1/4 cup of butter 1 1/2 teaspoons of salt 1 1/2 cups of flaked coconut 1 cup of light brown sugar 1 cup of flour Pineapple Filling one 8 ounce can of crushed pineapple; 1/4 teaspoon of salt 1 tablespoon of lemon juice 3/4 cup of sugar 3 tablespoons of cornstarch 1 tablespoon of butter |
| Cream butter & brown sugar until well mixed. Add coconut, flour & salt. Mix with a fork until crumbly. Press half the crumb mixture into a greased 9x9x2-inch baking pan. Spread pineapple filling evenly over crumb mixture. Cover with remaining crumb mixture & gently press down. Bake at 350ºF. for 30-35 minutes. Sprinkle top lightly with powdered sugar. MRS.
