Semolina Sweet (Greece)
Halva

2 cups of water
1 1/2 cups of sugar
1/2 cup of butter
1 cup of semolina or cream of wheat
2 tablespoons of chopped almonds
1/2 teaspoon of cinnamon

Heat the water, add the sugar and stir until dissolved. Bring to a boil and cook for 15 minutes until the syrup thickens. In another saucepan, melt the butter, stir in the semolina and continue stirring until the butter is absorbed. Add the syrup and stir until smooth. Place the mixture in a baking dish in a preheated 325ºF. oven for 20 minutes until the syrup has been absorbed. Stir in the almonds and pour into a serving dish. Dust with cinnamon and chill in the refrigerator before serving. 4 servings
