| | Glazed Louisiana Yam & Ham 6 medium yams 2 cups of dark corn syrup lemon juice a dash of pepper 1/4 teaspoon of nutmeg 1/3 cup of butter or margarine 1/2 teaspoon of seasoned salt one 5 pound cooked bone in half ham 4 unpeeled tart red apples 1/2 cup of walnut halves | | Place the yams in a saucepan, cover with boiling salted water and cook for about 30 minutes or until just tender. Drain, peel and cut in half. Place in a shallow 2 1/2 quart baking dish. Blend the corn syrup, 1 tablespoon of lemon juice, pepper and nutmeg and reserve 1/2 cup of the mixture for basting ham. Pour the remaining corn syrup mixture over yams and dot yams with butter. Sprinkle with seasoned salt and set aside. Place ham in a shallow roasting pan. Bake in 325ºF. oven for 1 hour and 45 minutes. Core the apples and cut into 1/4 inch thick slices. Brush with lemon juice. Add the apple slices and walnuts to yam mixture. Remove ham from oven and brush with reserved corn syrup mixture. Bake ham and yam mixture for about 25 minutes longer, basting both occasionally. Makes 6 servings |
