| Combine the ham, onion, bread crumbs, parsley, mustard and salt in a bowl. Add the eggs and blend well. Shape into patties and brown in butter, on both sides. Keep warm. Combine the water and paprika in a saucepan and heat to boiling point. Remove from heat and stir in sour cream. Spoon over ham patties and garnish with additional parsley, if desired.
