Macaroni Salmon Loaf

4 ounces of elbow macaroni, cooked al dente
one  1 pound can of pink or red salmon
2 tablespoons on onion, finely minced
1 tablespoon of chopped parsley
a dash of pepper
1 cup of coarse whole wheat bread
3 egg whites
3/4 cup of skim milk
2 cloves garlic, minced
1 teaspoon of dried dill
1/4 teaspoon of dried rosemary

Preheat oven to 350ºF.  Spray a 9 x 5" loaf pan with Pam. Combine all ingredients in a medium size bowl with a fork. Place in loaf pan and bake 35-40 minutes. Makes 4 servings. Variation: Heat 1/2 cup Marinara sauce with 2 tablespoons low fat buttermilk. Use as a sauce for the salmon loaf.
