| Patrick Swayze's Penne w/Chicken & Sun-Dried tomatoes
3 Shallots, peel, chop 1 teaspoon of vegetable oil 8 ounces of Chicken breast; cook, bone, Julienne 4 ounces of Sun-dried tomatoes, slice 1/2 cup of heavy cream 1 pound of Penne, cook 1/2 teaspoon of butter 2 tablespoons of vegetable oil 2 tablespoons of Parmesan, grate 1 teaspoon of fresh basil, julienne |

Sauté shallots in oil for 2 minutes or until soft. Add chicken and tomatoes and cook over moderate heat for 5 minutes. Add cream and cook, stirring occasionally, for 5 minutes.
