Penne with Tomato & Brie

2 cups of Penne pasta
1/2 cup of Hidden Valley Original Ranch
2 large Tomatoes, coarsely chopped
1 clove Garlic, minced
2 tablespoons of chopped fresh basil
1/4 teaspoon of pepper
6 ounces of Brie cheese


Cook penne according to package directions. Meanwhile, combine dressing, tomatoes, garlic, basil and pepper. Remove as much rind from Brie as possible and discard. Coarsely chop Brie and stir into tomato mixture. Drain penne, return to saucepan. Add tomato mixture and heat over medium heat, stirring just until cheese melts. Serves 4 Tip: Instead of Brie, substitute mozzarella cheese.
