Cook tortellini in boiling, salted water following package directions, drain. Combine the red pepper, onion, celery, and olives, add mixture to tortellini and toss well. Combine the mayonnaise, lemon juice and Tabasco sauce. Add dressing to pasta salad and toss gently until well coated. Refrigerate until well chilled. To serve, spoon tortellini salad onto bed of lettuce. Garnish with parsley sprigs. Serves 4 |
