Smothered Pork Chop   Geschmorte schweinerippen

4 pork chops, about 3/4" thick
1 teaspoon of salt
1 teaspoon of dry mustard
1 tablespoon of lemon juice
4 tablespoons of margarine or butter
1 medium onion, chopped
one 1 pound can of whole, peeled tomatoes



Rub the chops on both sides with salt, mustard and lemon juice, let stand for 30 minutes. Melt margarine in skillet, brown chops on both sides. Add onions, let cool a few minutes over medium heat until transparent. Add tomatoes with liquid. Cover and simmer until tender, about 20 - 30 minutes. If sauce becomes too thick or starts to separate, add a few tablespoons of hot water. Serve immediately. 4 servings
