Smothered Pork Chop Geschmorte schweinerippen
4 pork chops, about 3/4" thick
1 teaspoon of salt
1 teaspoon of dry mustard
1 tablespoon of lemon juice
4 tablespoons of margarine or butter
1 medium onion, chopped
one 1 pound can of whole, peeled tomatoes |

Rub the chops on both sides with salt, mustard and lemon juice, let stand
for 30 minutes. Melt margarine in skillet, brown chops on both sides. Add
onions, let cool a few minutes over medium heat until transparent. Add
tomatoes with liquid. Cover and simmer until tender, about 20 - 30 minutes.
If sauce becomes too thick or starts to separate, add a few tablespoons of
hot water. Serve immediately. 4 servings
