| Pumpkin Banana Nut Bread
4 cups of all purpose flour 4 teaspoons of baking powder 4 teaspoons of ground cinnamon 2 teaspoons of baking soda 2 teaspoons of ground ginger 1/2 teaspoon of salt 4 eggs one 15 - 16 ounce of pumpkin 1 cup of granulated sugar 1 cup of packed brown sugar 1 cup of mashed very ripe bananas 3/4 cup of vegetable oil 1 cup of chopped walnuts |

Combine flour, baking powder, cinnamon, baking soda, ginger and salt in medium bowl. In large bowl, beat eggs, pumpkin, granulated sugar, brown sugar, bananas and oil; mix well. Beat flour mixture into pumpkin mixture; stir in nuts. Spoon into 2 greased and floured 9x5 inch loaf pans. Bake in preheated 350ºF. oven for 55 to 60 minutes or until wooden pick inserted in centers comes out clean. Cool for 10 minutes. Remove to wire racks to cool completely. Makes 2 loaves. |
